I am a reluctant member of the low-carb club, because Middle Age settles on a person right where it says: in the middle. How unfair that I had to lose weight in order to wear the same clothes I’ve had for years!

Cutting back on bread, pasta, potatoes, rice, sweets and (argh) alcohol is the easiest way to trim your middle. But when you don’t eat bread (or your carb of choice), you really miss it. Hence the cornucopia of recipes online for ersatz “breads.” Cloud bread is made of eggs and cheese (haven’t tried it yet). Lettuce wraps are very popular too, but they leave me cold as a soggy leaf from the ‘fridge.

I made this “Cheesy Cauliflower Bread” and although it’s really nothing like bread, it’s delicious. The great consolation of low carb eating is that you get to have fatty stuff.

Grate a head of cauliflower, add two eggs from happy chickens, some mozzarella cheese, garlic and seasonings. Press into a pan and bake like a pizza…

When the cauliflower is lightly browned, add some parsley and more cheese; bake or broil until bubbly with golden spots.

As this cools, it firms up, so you can slice it into strips and pick it up in your fingers. It is more satisfying than zucchini noodles, which I can only tolerate if mixed half and half with pasta (or straight up as a salad, rather than posing as a main dish). I make the cauli-bread as an appetizer, or even as a meal, and despite the cheese, I don’t feel guilty because, hey, we just ate an entire head of cauliflower!
