Peach cobbler: I will eat the leftovers of this tomorrow for breakfast. That is, unless the Long-Suffering One raids the refrigerator after I go to bed.
Never again will I do the fussy cobbler where you make a biscuit batter and drop it over the fruit, or the pernickety one where you make a pie-crust type pastry. This is so much easier, and I like it better. The juices from the peaches and the sugar bubble together to create a caramel around the edges. I put a little mascarpone on it instead of ice cream.

You naughty girl đ Remember to pour some sugar on those peaches. And yes, I think the recipe will work with any fruit. It might vary in juiciness if the fruit is dry, like apples or pears. I had so much juice from the peaches that I thought it wouldn’t set up, but it worked really well.
But seriously, I do đ. I was thinking of using berries maybe. I must give it a try – the hungry hordes love sweet things.

Yes, it’s similar to a crumble, but without the crunchy aspect. A bit more soft and spongy, like a cake or American-style biscuit soaked with the juices.
Love Crumble, rhubarb especially. There’s an old recipe that my mother-in-law usually made for Sunday Tea, it was called ‘Courting Cake’, very similar to this. A thick layer of spiced apples on a blind baked base, topped with sponge. Never been able to find it in any cook book. May have been one of those ‘ration book’ specials I suppose?

Yes, melting the butter in the pan makes it easier. It reminds me of some oven pancake recipes. I did add one egg to the batter, but I’m sure it would be good even without that.
