This turned out to be a tasty dish. I sautéed some leftover rice in olive oil with garlic, bell pepper, oven-roasted plum tomatoes, salt, pepper and herbes de Provence, then added shreds of cooked egg, just as one would if making Asian-style fried rice. It’s garnished with grated Romano.
I wasn’t the first to think this up. Looking online, I see several “Mediterranean Fried Rice” recipes (like this one from Kitchen Frau), but they mostly use meat rather than eggs. Artichokes and sun-dried tomatoes from a jar seem to be popular ingredients for this delectable comfort food with Flavors of the Sun.

Oh, one of the ‘rice with bits’ meals! there are few better ones! The friend elements just adds to the taste 🙂 It is one of my favourite packed lunches.
