‘Tis a little-known fact that the “ambrosia” of the Hellenic Gods was actually potatoes dauphinoise. Yes, I know that potatoes are a new-world plant, but with the Gods, all things are possible. And indeed, they are quite partial to vintage Chimay as well.

Preheat the oven to 425F. Take 2.5 lbs of small red or yellow potatoes and slice them 1/4 inch or less. Put them in a dutch oven or other big pot with 2 cups milk, some fresh grated nutmeg, and salt. Simmer gently 5 minutes, stirring the while. Rub a lasagna-sized glass dish or casserole with garlic and dot with butter. Throw a few cloves chopped garlic into the potato/milk mixture, pour into the baking dish and top with a half cup of heavy whipping cream. Sprinkle with salt and fresh ground pepper. I used a light sprinkling of Romano cheese (which is cheating, but still good). Bake 35-40 minutes until lusciously creamy and browned on top… prepare to experience Elysium.
