This White Bordeaux (Chateau Lamothe de Haux 2011) was great with rapini enrobed in a delicate ricotta sauce! The Sauvignon Blanc flavors were noticeable after it spent a few minutes out of the fridge. Dry and slightly astringent with good fruit and citrus, more subtle than a Marlborough.


This was one of my “use up whatever’s left” evenings. Ricotta, some mostaccioli, assorted fancy mushrooms (oyster, chanterelle), and rapini. A bit on the sweet side due to the milk sugars in the ricotta, but not bad.
